During our trip to Orlando, my friend and I went to brunch at a charming café called The Briarpatch to kick off a day of browsing quaint boutiques in the Winter Park area. We decided to share a side order of zucchini bread sandwiches – and all I can say is: oh. my. goodness. Who knew a slathering of cream cheese between two mouth-watering pieces of moist and sweet zucchini bread could taste so scrumptious?
After getting settled in back home, I decided I’d try to recreate the dish myself. This past weekend, I followed this recipe and was really impressed with the results, as well as the glorious aroma that swallowed our home.
This is a simple and budget-friendly recipe, as you probably already have most of the ingredients.
I *love love love* my mini food processor. I used it to chop up both the walnuts and the zucchini, and it worked like a charm!
See? So quick and minimal clean-up required!
This was about when the glorious aroma took over our home.
And the final touch – a generous slathering of cream cheese. Mmm!
